Meatball Stew
Ingredients
- 10 oz ground beef
- 1 egg white
- 12 tsp dill weed
- 1 medium bell pepper chunked
- 1 2 oz onion sliced
- 2 c canned whole tomatoes
- 12 tsp salt
- 12 oz cooked red kidney beans
- 4 oz uncooked elbow macaroni
Directions
- Broil ground beef until rare and crumbled
- Combine with egg white and dill weed
- Shape into 24 equal sized meatballs
- In a large nonstick skillet saute meatballs until browned on all sides Add green pepper and onion to skillet
- Cover and steam 1 minute Stir in tomatoes and salt
- Then stir in beans and macaroni
- Cover and cook over medium heat about 20 minutes or until macaroni is tender
- Serves 4
