Meatball Vegetable Bake

Ingredients

  • 1 12 lb ground beef
  • 1 slightly beaten egg
  • 1 c soft bread crumbs
  • 14 c milk
  • 2 Tbsp dry onion soup mix
  • dash of pepper
  • 2 Tbsp salad oil
  • 1 1 lb can tomatoes
  • 1 c boiling water
  • 1 beef bouillon cube
  • 14 c cold water
  • 2 Tbsp cornstarch
  • 1 12 c sliced carrots
  • 2 medium onions quartered
  • 1 c sliced celery

Directions

  1. Combine meat bread crumbs milk soup mix and pepper
  2. Shape into balls
  3. Brown in hot oil in large skillet
  4. Remove meatballs and drain off excess fat
  5. Add tomatoes
  6. Dissolve bouillon cube in boiling water
  7. Add
  8. 14 cup cold water and cornstarch and add this slowly to the mixture until it thickens
  9. Add
  10. meatballs carrots onion and celery
  11. Cover and simmer slowly until vegetables are tender or pour into 2-quart casserole and cover and bake at 350 for 1 hour
