Meatless Mexican Cornbread

Ingredients
- 1 c cornmeal
- 1 tsp salt
- 1 tsp sugar
- 3 Tbsp flour
- 1 can whole kernel corn
- 1 c buttermilk
- 3 eggs
- 1 small bell pepper chopped
- 1 large onion chopped
- 2 jalapenos chopped fine
- 12 c bacon fat
- grated Cheddar cheese
- 6 slices crisp bacon
Directions
- Mix all ingredients except bacon Pour half of batter into a greased 9 x 13 inch glass dish Crumble bacon and cheese on top of first layer Cover with remaining half of batter Bake at 350 for 45 minutes
