Mei LingS Hawaiian Chicken
Ingredients
- 12 c barbecue sauce
- 12 c orange juice
- 14 c brown sugar
- 2 Tbsp oil
- 2 Tbsp flour
- 14 tsp salt
- 4 c cut up cooked chicken
- 1 large 20 oz can pineapple chunks drained
- 1 can sliced water chestnuts
- 1 tsp chopped candied ginger or regular ground ginger
- cooked rice
- toasted almonds or Macadamia nuts
Directions
- Combine sauce juice sugar oil flour and salt mix well Pour into skillet
- Cook stirring until mixture comes to a boil and thickens slightly
- Add chicken pineapple water chestnuts and ginger
- Cover simmer for 10 minutes
- Serve over rice Sprinkle with nuts
- Serves 6 to 8
