Meringue Cups
Ingredients
- 6 egg whites at room temperature
- 14 tsp salt
- 1 12 c superfine sugar
- 1 tsp vanilla
- 1 pt fresh strawberries
- Lemon Curd
Directions
- Preheat oven to 200
- Put egg whites and salt in bowl of mixer
- Beat until foamy
- Gradually add sugar until 1 14 cups have been added
- Beat until not grainy
- Fold in remaining 14 cup sugar and the vanilla into meringue
- Fill a pastry bag with mixture and pipe onto lightly greased cookie sheet
- Bake 1 hour until completely dry
- Remove from pan and put on rack to cool Fill each cup with Lemon Curd and top with fresh strawberries
