Meringue Cups

Ingredients

  • 6 egg whites at room temperature
  • 14 tsp salt
  • 1 12 c superfine sugar
  • 1 tsp vanilla
  • 1 pt fresh strawberries
  • Lemon Curd

Directions

  1. Preheat oven to 200
  2. Put egg whites and salt in bowl of mixer
  3. Beat until foamy
  4. Gradually add sugar until 1 14 cups have been added
  5. Beat until not grainy
  6. Fold in remaining 14 cup sugar and the vanilla into meringue
  7. Fill a pastry bag with mixture and pipe onto lightly greased cookie sheet
  8. Bake 1 hour until completely dry
  9. Remove from pan and put on rack to cool Fill each cup with Lemon Curd and top with fresh strawberries
