Ingredients

• 1 c Northern beans dried
• 2 qt water
• 1 small ham hock 12 lb
• 12 lb beef short ribs or 1 pkg stew meat
• 2 potatoes
• 1 pkg frozen turnip greens or collard greens fresh is good too
• 12 chopped onion
• 12 chopped green pepper bell that is
• 3 Italian sausages skins removed
• 1 bay leaf
• 1 tsp salt

Directions

1. Soak beans overnight
2. In a large pot put the water ham hock short ribs bay leaf and salt
3. Boil
4. Skim foam simmer and cook for 30 minutes
5. Add beans and cook until tender
