Merry Cherry Salad

Ingredients

• 1 c peaches drained
• 1 c pineapple drained
• 12 c maraschino cherries drained
• 1 pkg strawberry gelatin
• 1 c hot water
• 12 c combined peach and pineapple juice
• 1 3 oz pkg cream cheese
• 1 Tbsp lemon juice
• 12 tsp salt
• 2 Tbsp mayonnaise
• 12 c whipped topping
• 1 c miniature marshmallows
• 1 c coconut

Directions

1. Drain fruits and reserve juice
2. Dissolve gelatin in hot water and add fruit juice
3. Chill until partially congealed
4. Blend cream cheese with lemon juice salt and mayonnaise
5. Fold in whipped cream
6. Beat chilled gelatin until light and fluffy
7. Fold into cream cheese mixture and fruits
8. Pour into chilled buttered pan
9. Freeze until firm
10. Remove from freezer
11. Let warm enough to cut into squares
12. Serve on lettuce leaf
13. Garnish with maraschino cherries or coconut
