Mexicali Stir-Fry
Ingredients
- 1 Tbsp oil
- 1 12 lb lean ground beef
- 13 c chopped green onion
- 2 Tbsp chili powder
- 1 10 oz pkg frozen corn
- 1 tsp sugar
- 1 16 oz can stewed tomatoes
- 1 tsp oregano
- 8 oz shredded Cheddar cheese
- 2 small heads Boston lettuce
- 1 8 oz pkg corn chips
Directions
- Heat oil in wok
- Add beef and onion
- Stir-fry over high heat until beef is done
- Drain excess fat
- Add chili powder corn tomatoes sugar oregano and dash of salt and pepper
- Bring to a boil
- Lower heat and simmer 8 to 10 minutes
- Stir in cheese until melted
- Spoon over shredded lettuce and top with corn chips
