Mexican Chili Bake
Ingredients
- 1 c chopped onions
- 1 c chopped green peppers
- 1 clove garlic crushed
- 1 Tbsp butter
- 3 c cooked rice
- 2 cans diced tomatoes and green chilies
- 1 Tbsp chili powder
- 1 lb lean ground beef
- 1 c grated cheese
- 1 c crushed corn chips
Directions
- In large skillet cook onions green peppers and garlic in butter until tender but not brown Stir in rice tomatoes and seasoning
- Heat thoroughly
- Saute beef stir beef into rice mixture
- Spoon half of beef-rice mixture into buttered shallow 2-quart casserole dish
- Sprinkle with 12 cup cheese and 12 cup corn chips
- Repeat layers
- Bake at 350 for 20 minutes or until heated thoroughly
