Mexican Corn Bread

Ingredients

• 2 medium jalapeno peppers seeded and chopped
• 1 box Jiffy corn muffin mix
• 1 12 c shredded Cheddar cheese
• 1 large onion chopped
• 3 eggs slightly beaten
• 2 12 c milk
• 1 12 c self-rising corn meal
• 1 8 oz can creamed corn
• 12 c vegetable oil

Directions

1. Combine ingredients in a large bowl
2. Pour into greased 9 x 13-inch pan and bake at 400 for 40 minutes or until done
