Mexican Corn Bread

Ingredients
- 2 medium jalapeno peppers seeded and chopped
- 1 box Jiffy corn muffin mix
- 1 12 c shredded Cheddar cheese
- 1 large onion chopped
- 3 eggs slightly beaten
- 2 12 c milk
- 1 12 c self-rising corn meal
- 1 8 oz can creamed corn
- 12 c vegetable oil
Directions
- Combine ingredients in a large bowl
- Pour into greased 9 x 13-inch pan and bake at 400 for 40 minutes or until done
