Mexican Fri Chik

Ingredients

  • 2 cans diced Fri Chik drained
  • 1 small can evaporated milk
  • 12 c sour cream
  • 1 can cream of celery soup
  • 1 c chopped onion
  • 1 c Monterey Jack cheese grated
  • 1 c Cheddar cheese grated
  • 1 8 oz can chopped mild green chilies
  • 18 corn tortillas

Directions

  1. Saute onion and green chilies until onion is soft
  2. Add to remaining ingredients except tortillas and Cheddar cheese
  3. Grease a 3-quart casserole dish
  4. Place a layer of tortillas in the bottom of the pan
  5. Spoon some chicken mixture on tortillas and continue layering tortillas and chicken mixture
  6. Top with Cheddar cheese
  7. Bake uncovered at 300 for 1 hour
  8. Top servings with your favorite picante sauce
  9. Serves 8
