Mexican Fri Chik
Ingredients
- 2 cans diced Fri Chik drained
- 1 small can evaporated milk
- 12 c sour cream
- 1 can cream of celery soup
- 1 c chopped onion
- 1 c Monterey Jack cheese grated
- 1 c Cheddar cheese grated
- 1 8 oz can chopped mild green chilies
- 18 corn tortillas
Directions
- Saute onion and green chilies until onion is soft
- Add to remaining ingredients except tortillas and Cheddar cheese
- Grease a 3-quart casserole dish
- Place a layer of tortillas in the bottom of the pan
- Spoon some chicken mixture on tortillas and continue layering tortillas and chicken mixture
- Top with Cheddar cheese
- Bake uncovered at 300 for 1 hour
- Top servings with your favorite picante sauce
- Serves 8
