Mexican Fruit Cake

Ingredients

  • 2 eggs
  • 2 c sugar
  • 2 c plain flour
  • 2 tsp baking soda
  • 20 oz can crushed pineapple
  • 1 c pecans
  • 6 oz cream cheese
  • 12 c margarine softened
  • 2 c powdered sugar
  • 1 tsp vanilla

Directions

  1. Cream eggs and sugar add flour and soda
  2. Beat with mixer Add pineapple and pecans
  3. Grease and flour a 9 x 13-inch pan Pour mixture into pan
  4. Bake at 350 for 30 to 35 minutes
  5. Mix cream cheese margarine powdered sugar and vanilla
  6. Frost cake with this mixture then refrigerate
