Mexican Fruitcake
Ingredients
- 2 c flour
- 2 c sugar
- 2 tsp soda
- 1 20 oz can crushed pineapple with juice
- 2 beaten eggs
- 1 c pecans
Directions
- Combine dry ingredients
- Add pineapple and eggs
- Mix with mixer about 2 minutes
- Add pecans
- Bake in 9 x 13-inch loaf pan greased and floured
- Bake at 350 for 30 minutes
