Mexican Fruitcake

Ingredients

  • 2 c flour
  • 2 c sugar
  • 2 tsp soda
  • 1 20 oz can crushed pineapple with juice
  • 2 beaten eggs
  • 1 c pecans

Directions

  1. Combine dry ingredients
  2. Add pineapple and eggs
  3. Mix with mixer about 2 minutes
  4. Add pecans
  5. Bake in 9 x 13-inch loaf pan greased and floured
  6. Bake at 350 for 30 minutes
