Mexican Green Peppers
Ingredients
- 6 medium size green peppers
- 1 lb ground beef
- 1 large onion chopped
- 1 13 c chopped fresh tomatoes
- 1 c cooked rice
- 1 12 tsp salt
- 1 tsp chili powder
- 12 tsp pepper
- 1 8 oz can tomato sauce
Directions
- Cut off tops of green peppers remove seed
- Cook peppers 5 minutes in boiling water to cover salt added
- Drain and set aside
- Combine next 7 ingredients
- Mix well
- Fill peppers with meat mixture
- Place in a 2-quart shallow casserole
- Pour tomato sauce over and around the peppers
- Bake at 375 for 45 to 50 minutes
- Yields 6 servings
