Mexican Green Peppers

Ingredients

  • 6 medium size green peppers
  • 1 lb ground beef
  • 1 large onion chopped
  • 1 13 c chopped fresh tomatoes
  • 1 c cooked rice
  • 1 12 tsp salt
  • 1 tsp chili powder
  • 12 tsp pepper
  • 1 8 oz can tomato sauce

Directions

  1. Cut off tops of green peppers remove seed
  2. Cook peppers 5 minutes in boiling water to cover salt added
  3. Drain and set aside
  4. Combine next 7 ingredients
  5. Mix well
  6. Fill peppers with meat mixture
  7. Place in a 2-quart shallow casserole
  8. Pour tomato sauce over and around the peppers
  9. Bake at 375 for 45 to 50 minutes
  10. Yields 6 servings
