Mexican Jalapeno Cornbread

Ingredients

  • 1 lb ground beef browned and drained
  • 1 c yellow cornmeal
  • 12 c cooking oil
  • 12 tsp salt
  • 1 can cream-style corn No 2 large
  • 3 jalapeno peppers chopped
  • 2 eggs slightly beaten
  • 1 c milk
  • 12 tsp soda
  • 1 onion chopped fine
  • 12 lb grated cheese

Directions

  1. Mix eggs cornmeal milk oil soda salt and corn
  2. Place half of mixture in skillet or pan that has been sprayed with Pam Top with ground beef onions grated cheese and jalapeno peppers Put remaining cornbread mixture on top
  3. Bake 50 to 60 minutes at 375
