Mexican Lasagna
Ingredients
- 1 12 lb ground beef
- 1 medium onion chopped
- 1 clove garlic minced
- 1 lb can tomatoes
- 1 14 oz jar taco sauce
- 4 oz can chopped ripe olives
- 4 oz can chopped green chiles partially drained
- 1 tsp salt if needed and pepper
- 10 corn tortillas
- 34 lb Monterey Jack cheese sliced thin freeze 2 or 3 hours before slicing
- 34 c Ricotta cheese
- 1 egg
- tortilla chips crushed
- 12 c shredded Cheddar cheese
Directions
- Brown meat onion and garlic in a large skillet drain off fat
- Add tomatoes taco sauce olives green chiles salt and pepper stirring to blend mixture
- Simmer 20 minutes stirring occasionally
