Mexican Manicotti
Ingredients
- 12 lb ground beef
- 12 16 oz can refried beans
- 2 Tbsp chopped onion
- 1 tsp oregano leaves
- 1 1 14 oz pkg taco seasoning mix
- 2 c 8 oz shredded Colby-Jack cheese
- 10 manicotti shells
- 1 15 oz can tomato sauce
- 2 c water
- 12 c sour cream
- 3 green onions sliced
- 14 c sliced ripe olives
Directions
- Mix together the ground beef beans onion oregano 1 12 tablespoons of seasoning mix and 1 cup of cheese
- With a small spoon or using fingers press meat mixture into shells
- Arrange in a 12 x 8-inch microwave-safe baking dish
