Mexican Pizza

Ingredients

  • 12 c plus 1 Tbsp Aunt Jemima corn meal
  • 1 12 c flour
  • 1 Tbsp baking powder
  • 12 tsp salt
  • 34 c milk
  • 14 c vegetable oil
  • 1 12 oz taco sauce
  • 1 15 12 oz Mexican-style chili beans undrained
  • 1 medium green pepper cut in rings
  • 2 c 8 oz shredded Monterey Jack cheese

Directions

  1. Heat oven to 450
  2. Grease 14-inch round pizza pan or 15 x 10-inch jelly roll pan
  3. Sprinkle 1 tablespoon corn meal evenly into pan
  4. Combine remaining 12 cup of meal flour baking powder and salt
  5. Add milk and oil and stir with fork until mixture forms a ball
  6. Press into the pan and shape edge to form a rim
  7. Bake 15 minutes
  8. Spread taco sauce evenly over crust
  9. Top with beans pepper rings and cheese and continue baking until cheese is melted
