Mexican Potato SaladMicrowave
Ingredients
- 2 cans tiny new potatoes drained and quartered
- 14 c picante sauce
- juice from 1 lime
- 1 Tbsp olive oil
- 14 tsp salt
- 18 tsp pepper
- 1 large tomato chopped
- 12 c sliced pitted ripe olives
- 14 c sliced green onion
- 1 Tbsp parsley
Directions
- In a 2-quart microwave-safe casserole place potatoes
- In a small microwave-safe bowl combine picante sauce lime juice oil salt and pepper
- Cook uncovered on High for 45 to 60 seconds or until heated through
- Add sauce to potatoes
- Stir in tomatoes olives onion and parsley
- Warm all when ready to serve
