Mexican Potato SaladMicrowave

Ingredients

  • 2 cans tiny new potatoes drained and quartered
  • 14 c picante sauce
  • juice from 1 lime
  • 1 Tbsp olive oil
  • 14 tsp salt
  • 18 tsp pepper
  • 1 large tomato chopped
  • 12 c sliced pitted ripe olives
  • 14 c sliced green onion
  • 1 Tbsp parsley

Directions

  1. In a 2-quart microwave-safe casserole place potatoes
  2. In a small microwave-safe bowl combine picante sauce lime juice oil salt and pepper
  3. Cook uncovered on High for 45 to 60 seconds or until heated through
  4. Add sauce to potatoes
  5. Stir in tomatoes olives onion and parsley
  6. Warm all when ready to serve
