Mexican Quiche

Ingredients

  • 1 9-inch unbaked pie crust
  • 12 lb ground pork sausage
  • 12 c sliced green onion
  • 2 cloves minced garlic
  • 1 4 oz can diced green chili peppers drained
  • 2 c shredded American cheese
  • 2 Tbsp flour
  • 1 c milk
  • 12 tsp Tabasco sauce
  • 4 eggs beaten

Directions

  1. Bake unpicked pastry with 2 layers of foil for 5 minutes at 450
  2. Remove foil bake 5 to 7 minutes more keep warm
  3. Cook sausage onions and garlic until meat is done
  4. Drain
  5. Stir in chili peppers
  6. In another saucepan combine cheese and flour add cream
  7. Cook and stir until cheese is melted
  8. Add hot sauce Blend hot cream mixture into beaten eggs slowly
  9. Add meat mixture
  10. Pour into pastry
  11. Bake at 325 for 20 to 25 minutes or until a knife comes out clean
  12. Let stand
  13. Serve with picante sauce sour cream and guacamole
