Mexican Soup
Ingredients
- 2 lb ground beef
- 1 medium onion
- 1 can pinto beans
- 1 can kidney beans
- 1 can whole corn
- 1 can white hominy
- 1 small can chopped green chiles
- 1 can Ro-Tel and pepper tomatoes
- 2 medium tomatoes or small can tomato sauce
- 1 can beef broth undrained
- 1 pkg taco seasoning mix
- 1 pkg Ranch dressing mix
Directions
- Saute beef and onion in a heavy skillet until all pink is gone
- Add the beans corn hominy chiles Ro-Tel tomatoes and broth
- Add taco mix and dressing mix
- Bring to a boil in a large kettle and simmer at least 45 minutes
- Serve with corn or tortilla chips
- At least 10 servings
