Mexican Wastebasket Soup

Ingredients

• 12 c chopped onions
• 1 can Ro-Tel diced tomatoes
• 1 can green chiles
• 2 cans whole kernel corn
• 2 cans pinto beans
• 1 can lima beans
• 1 can black olives
• 1 pkg beef onion soup mix
• 1 c chopped celery
• 2 pkg small Smok-Y-Links sausage

Directions

1. Combine all ingredients in a Dutch oven and simmer 1 to 2 hours
2. Serve over cooked rice with cornbread
