Microwave Cream Pie Filling

Ingredients

  • 3 large eggs separated
  • 1 12 c milk or 34 c evaporated milk and 34 c whole milk
  • 1 c sugar
  • 2 Tbsp flour
  • 2 Tbsp cornstarch
  • 14 tsp butter
  • 1 tsp vanilla

Directions

  1. Mix egg yolks and milk with a whisk
  2. Fluff up good
  3. Mix dry ingredients together then add to egg mixture
  4. Cook in microwave on Full power for 6 to 8 minutes
  5. Stir at 2 minute intervals until thickened
  6. When finished add margarine and vanilla Makes 1 9-inch or 2 8-inch pies
