Microwave Crunchy Caramel Corn
Ingredients
- 4 c popped corn
- 2 c Chex corn and rice cereal
- 12 c mixed nuts
- 12 c brown sugar
- 14 c margarine
- 2 Tbsp corn syrup
- 14 tsp salt
- 12 tsp vanilla
- 14 tsp soda
Directions
- In large microwave bowl combine popcorn cereal and nuts
- In 4-cup microwave bowl combine brown sugar margarine syrup and salt microwave on High for 1 12 minutes
- Stir microwave on High for 45 seconds to 2 minutes or until mixture comes to rolling boil
- Stir in vanilla and baking soda mixture will become foamy Pour over popcorn mixture and toss to coat
- Spread 12 of mixture in ungreased 12 x 8-inch pan
- Microwave on High for 2 to 3 minutes or until popcorn is evenly coated stirring every minute
- Spread on foil to cool
- Using same dish repeat with remaining popcorn mixture
- Allow to dry for 2 hours
- Store tightly in covered container
