Microwave Crunchy Caramel Corn

Ingredients

  • 4 c popped corn
  • 2 c Chex corn and rice cereal
  • 12 c mixed nuts
  • 12 c brown sugar
  • 14 c margarine
  • 2 Tbsp corn syrup
  • 14 tsp salt
  • 12 tsp vanilla
  • 14 tsp soda

Directions

  1. In large microwave bowl combine popcorn cereal and nuts
  2. In 4-cup microwave bowl combine brown sugar margarine syrup and salt microwave on High for 1 12 minutes
  3. Stir microwave on High for 45 seconds to 2 minutes or until mixture comes to rolling boil
  4. Stir in vanilla and baking soda mixture will become foamy Pour over popcorn mixture and toss to coat
  5. Spread 12 of mixture in ungreased 12 x 8-inch pan
  6. Microwave on High for 2 to 3 minutes or until popcorn is evenly coated stirring every minute
  7. Spread on foil to cool
  8. Using same dish repeat with remaining popcorn mixture
  9. Allow to dry for 2 hours
  10. Store tightly in covered container
