Microwave Enchilada Casserole

Ingredients

  • 1 lb ground beef
  • 1 clove garlic minced
  • 14 c chopped onion
  • 1 8 oz can Las Palmas enchilada sauce
  • 12 c water
  • 12 tsp salt
  • 4 corn tortillas
  • 2 c shredded sharp Cheddar cheese
  • 12 tsp pepper
  • 1 tsp chili powder

Directions

  1. Mix ground beef onion and garlic in 2-quart casserole Microwave at High 5 to 9 minutes
  2. Break up beef and drain
  3. Stir in sauce water chili powder salt and pepper
  4. Microwave on High 6 minutes stirring after 12 time
  5. Alternately layer tortillas meat sauce and cheese in 1 12-quart round casserole ending with cheese
  6. Microwave at High 1 to 3 minutes until cheese is melted Let stand 2 to 3 minutes
  7. Serves 4 to 6
