Microwave Garlicy Potatoes

Ingredients

  • 1 lb small new potatoes scrubbed and patted dry
  • 2 large cloves garlic peeled and crushed
  • 3 Tbsp olive oil
  • 12 tsp salt
  • freshly ground black pepper

Directions

  1. Place potatoes in a 1 12-quart dish
  2. Add remaining ingredients and stir to coat potatoes
  3. Cover tightly with microwave plastic wrap
  4. Cook on High for 10 minutes in a 600 to 700 watt oven or 15 minutes in a 400 to 500 watt oven shaking dish to redistribute potatoes
  5. Potatoes are done when the tip of a small knife easily pierces the potato in the center
  6. Serves 4 as a side dish
