Microwave Rice Pudding

Ingredients

  • 3 eggs beaten
  • 2 c milk
  • 13 c sugar
  • 1 tsp vanilla
  • 12 tsp salt
  • 2 c cooked rice
  • 13 c raisins
  • ground cinnamon

Directions

  1. In a 2-quart casserole combine eggs milk sugar vanilla and salt
  2. Add rice and raisins
  3. Mix well
  4. Microcook at High uncovered for 8 to 10 minutes
  5. Stir every 2 minutes
  6. Sprinkle with cinnamon
  7. Let stand 30 minutes without stirring
