Microwave Scallops In Mushroom-Cream Sauce

Ingredients

  • 2 Tbsp butter or margarine
  • 4 green onions chopped
  • 14 lb medium mushrooms sliced
  • 1 large carrot shredded
  • 12 c milk
  • 2 Tbsp white wine or lemon juice
  • 1 1 oz pkg white sauce mix
  • 1 c 4 oz shredded Swiss cheese
  • chopped parsley
  • 1 lb bag scallops

Directions

  1. In 2-quart glass casserole melt butter on High 1 minute
  2. Add onions mushrooms and carrot cover with plastic wrap and vent Cook on High 3 minutes
  3. Stir in milk wine and white sauce mix until blended
  4. Cover vent and cook on High 3 more minutes stirring once
  5. Stir in scallops cover and vent
  6. Cook on High 2 minutes
  7. Add cheese stir until melted
  8. Spoon into four large scallop shells
  9. Garnish with parsley
