Microwave Sweet Potato Casserole

Ingredients

• 3 lb cooked sweet potatoes
• 34 c brown sugar
• 12 tsp cinnamon
• 12 tsp salt
• 3 Tbsp butter or margarine
• 34 c orange juice
• 1 c miniature marshmallows

Directions

1. Wash sweet potatoes thoroughly
2. Pierce skins all around with a knife or fork
3. Wrap individually in a paper towel and microwave on High
4. Count the total number of potatoes to be cooked and add 8 minutes per potato to total the necessary cooking time
5. When cooking time elapses allow potatoes to remain wrapped in paper towel 2 minutes per potato
6. Unwrap potatoes and allow to cool enough to handle and peel
