Microwave Sweet Potato Casserole
Ingredients
- 3 lb cooked sweet potatoes
- 34 c brown sugar
- 12 tsp cinnamon
- 12 tsp salt
- 3 Tbsp butter or margarine
- 34 c orange juice
- 1 c miniature marshmallows
Directions
- Wash sweet potatoes thoroughly
- Pierce skins all around with a knife or fork
- Wrap individually in a paper towel and microwave on High
- Count the total number of potatoes to be cooked and add 8 minutes per potato to total the necessary cooking time
- When cooking time elapses allow potatoes to remain wrapped in paper towel 2 minutes per potato
- Unwrap potatoes and allow to cool enough to handle and peel
