Microwave Vegetable Soup
Ingredients
- 2 small carrots chopped finely
- 1 c cabbage shredded fine
- 1 stalk celery chopped finely
- 12 10 oz box frozen mixed vegetables
- 13 10 oz box frozen corn
- 1 14 to 16 oz can tomatoes
- 2 14 12 oz cans beef broth
- 12 can tomato soup and 12 can water
- 2 beef or chicken bouillon cubes
- 1 small bay leaf
- 14 tsp thyme
- 14 tsp pepper
- salt at end of cooking as desired
Directions
- Preparation time
- 1 hour
- Use a 4-quart microwave pot with cover
- Cook ingredients on High for 20 minutes stirring at 10 minutes
- Cook at 50 power for 25 minutes stirring every 10 minutes
- Taste softness of celery for doneness
