Midwestern Scalloped Corn And Sausage Casserole

Ingredients

  • 14 tsp salt
  • pinch of black pepper
  • 2 medium fresh tomatoes sliced
  • 12 c grated Cheddar cheese
  • 34 lb pork sausage
  • 3 Tbsp flour
  • 1 14 c milk
  • 1 12 c whole kernel corn drained

Directions

  1. Brown sausage drain off all fat except about 2 tablespoons Add flour and stir until blended then add milk and stir until mixture boils and thickens
  2. Add corn salt and pepper to mixture Place into shallow casserole
  3. Arrange thick slices of tomato over the top of sausage and corn mixture
  4. Top with grated cheese Place under broiler for 4 to 5 minutes until tomatoes are cooked and cheese is melted
  5. Yields 4 servings
