Minestrone With Sausage

Ingredients

• 12 lb Italian sausage
• 2 12 to 3 lb beef shanks
• 8 c water
• 1 12 tsp salt
• 18 tsp pepper
• 1 bay leaf
• 1 c sliced zucchini
• 1 c sliced carrots
• 1 c chopped celery
• 4 oz 1 c uncooked shell macaroni
• 12 c chopped onion
• 1 tsp basil leaves crushed
• 1 garlic clove minced
• 28 oz can tomatoes undrained and cut up
• 16 oz can kidney beans undrained
• 8 oz can tomato sauce

Directions

1. If sausage comes in casing remove casing
2. In 6-quart saucepot brown sausage and break into small pieces
3. Remove sausage from saucepot drain on paper towel
4. Refrigerate sausage
