Minestrone With Sausage
Ingredients
- 12 lb Italian sausage
- 2 12 to 3 lb beef shanks
- 8 c water
- 1 12 tsp salt
- 18 tsp pepper
- 1 bay leaf
- 1 c sliced zucchini
- 1 c sliced carrots
- 1 c chopped celery
- 4 oz 1 c uncooked shell macaroni
- 12 c chopped onion
- 1 tsp basil leaves crushed
- 1 garlic clove minced
- 28 oz can tomatoes undrained and cut up
- 16 oz can kidney beans undrained
- 8 oz can tomato sauce
Directions
- If sausage comes in casing remove casing
- In 6-quart saucepot brown sausage and break into small pieces
- Remove sausage from saucepot drain on paper towel
- Refrigerate sausage
