Mini Cheese Cakes

Ingredients

• 12 c graham cracker crumbs
• 2 Tbsp margarine melted
• 1 8 oz pkg cream cheese softened
• 14 c sugar
• 12 tsp vanilla
• 1 egg
• 1 10 oz jar cherry preserves

Directions

1. Combine crumbs and butter mixing well
2. Line muffin pans with paper liners
3. Spoon graham cracker mixture into each liner Press into bottom
4. Beat cream cheese until light and fluffy Gradually add sugar
5. Mix well
6. Add egg and vanilla beating well
7. Spoon into liners
8. Bake at 350 for 10 minutes
