Mini Cheesecakes

Ingredients

• 2 8 oz pkg cream cheese
• 1 c sugar
• 2 eggs
• 1 tsp vanilla flavoring
• vanilla wafers
• any fruit pie filling

Directions

1. Beat cream cheese until light and fluffy
2. Gradually add sugar mixing well
3. Add eggs one at a time beating well after each egg
4. Stir in vanilla
5. Place vanilla wafer in muffin paper and pan and fill with cream cheese mixture
6. Bake at 350 for 20 minutes Chill overnight
7. Top with pie filling
