Mini Quiches
Ingredients
- pastry for 2-crust pie
- 1 4 14 oz can shrimp
- 14 c green onion chopped fine
- 14 c sliced black olives
- 4 oz grated Swiss cheese
- 12 c mayonnaise
- 2 eggs
- 13 c milk
- 14 tsp salt
- 14 tsp dill weed
Directions
- On floured surface roll half of pastry into a 12-inch circle Cut 6 4-inch circles
- Repeat with second pastry
- Fit into 12 muffin pan cups
- Fill each muffin cup with some shrimp green onion black olives and cheese
- Beat remaining ingredients and pour over mixture in muffin cups
- Bake in 400 oven for 15 to 20 minutes
- Makes 12 appetizers
