Mission Artichoke And Spinach Frittata

Ingredients

  • 3 eggs
  • 1 c milk
  • 1 c flour
  • 1 tsp seasoned salt or onion powder
  • dash of pepper
  • 34 lb grated Monterey Jack cheese
  • 6 oz jar marinated artichokes cut in small pieces
  • 14 to 12 lb sliced mushrooms
  • 4 c fresh spinach or chard chopped into small pieces

Directions

  1. Melt 14 cup or less margarine in 9 x 13-inch glass pan
  2. Beat the eggs then gradually mix in the remaining ingredients one at a time in order
  3. Pour in the 9 x 13-inch pan
  4. Bake at 325 for approximately 40 minutes
