Mixed Raisin-Bran Muffins
Ingredients
- 1 14 c oat bran
- 1 c whole wheat pastry flour
- 14 c brown sugar
- 12 c raisins
- 2 tsp baking powder
- 14 tsp salt
- 1 c low-fat milk
- 1 egg beaten
- 12 c molasses
- 2 Tbsp vegetable oil
Directions
- Combine dry ingredients in a large bowl
- In separate bowl mix milk egg molasses and oil
- Add liquid ingredients to dry and mix only until dry ingredients are moistened the mixture should be lumpy
- Spray muffin tin with cooking spray or line with baking cups
- Fill each 34 full
- Bake at 425 for 15 minutes or until tops are golden brown
