Mixed Raisin-Bran Muffins

Ingredients

  • 1 14 c oat bran
  • 1 c whole wheat pastry flour
  • 14 c brown sugar
  • 12 c raisins
  • 2 tsp baking powder
  • 14 tsp salt
  • 1 c low-fat milk
  • 1 egg beaten
  • 12 c molasses
  • 2 Tbsp vegetable oil

Directions

  1. Combine dry ingredients in a large bowl
  2. In separate bowl mix milk egg molasses and oil
  3. Add liquid ingredients to dry and mix only until dry ingredients are moistened the mixture should be lumpy
  4. Spray muffin tin with cooking spray or line with baking cups
  5. Fill each 34 full
  6. Bake at 425 for 15 minutes or until tops are golden brown
