Mocha Cookies

Ingredients
- 1 c. sugar
- 1/2 c. margarine or butter, softened
- 1 1/2 tsp. vanilla
- 1 egg
- 1 1/2 c. all-purpose flour
- 1/4 c. cocoa
- 2 Tbsp. instant coffee crystals
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- caramel icing
Directions
- Beat sugar, margarine, vanilla and egg in a medium bowl until light and fluffy.
- Stir in remaining ingredients except caramel icing.
- Cover and refrigerate 1 hour, until chilled.
- Heat oven to 375°.
- Roll dough 1/8-inch thick on lightly floured surface.
- Cut into cookies.
- Bake on greased cookie sheet until brown.
