Mock Angel Food Cake

Ingredients

• 2 c cake flour
• 2 c sugar
• 14 tsp salt
• 7 egg whites
• 1 tsp cream of tartar
• 3 tsp baking powder
• 1 c boiling water
• 1 tsp vanilla

Directions

1. Sift flour 5 times then add sugar and salt
2. Beat egg whites with cream of tartar until about half stiff then add baking powder
3. Beat until it stands in peaks
4. Now pour boiling water over flour and sugar and stir until well mixed
5. Add vanilla Fold in egg whites until well blended
6. Bake in ungreased 9 x 13-inch pan in slow oven at 320
