Mock Apple Pie

Ingredients

• 4 zucchini slightly cooked drained and cooled
• 1 14 c sugar
• 1 12 tsp cinnamon
• 1 12 tsp cream of tartar
• 4 Tbsp apple cider or juice
• 2 Tbsp flour
• 2 Tbsp lemon juice
• dash of nutmeg
• crust for 2-crust pie

Directions

1. Use large zucchini that have lost their sheen
2. Peel remove seeds and membrane
3. Slice as you would apples
