Molded Shrimp Loaf
Ingredients
- 2 pkg unflavored gelatin
- 12 c cold water
- 1 10 34 oz can tomato soup
- 8 oz cream cheese softened and mashed
- 1 c finely chopped celery
- 1 c finely chopped green and red pepper
- 12 oz shrimp chopped and chilled in ice water
- 1 c mayonnaise
- 1 Tbsp grated onion
- 1 Tbsp horseradish
- 1 Tbsp capers drained
- 12 tsp hot pepper sauce
- salt to taste
- 12 head shredded lettuce for garnish
- lemonlime slices for decoration
Directions
- Dissolve gelatin in cold water
- Bring tomato soup to a boil in saucepan
- Add gelatin and allow to cool
- When cool add cream cheese
- Stir in all other ingredients
- Pour into an oiled 9 x 5-inch loaf pan cover and chill for 2 to 4 hours or until set To serve unmold on large platter
- Garnish with lettuce and lemon and lime slices
