Molded Shrimp Loaf

Ingredients

  • 2 pkg unflavored gelatin
  • 12 c cold water
  • 1 10 34 oz can tomato soup
  • 8 oz cream cheese softened and mashed
  • 1 c finely chopped celery
  • 1 c finely chopped green and red pepper
  • 12 oz shrimp chopped and chilled in ice water
  • 1 c mayonnaise
  • 1 Tbsp grated onion
  • 1 Tbsp horseradish
  • 1 Tbsp capers drained
  • 12 tsp hot pepper sauce
  • salt to taste
  • 12 head shredded lettuce for garnish
  • lemonlime slices for decoration

Directions

  1. Dissolve gelatin in cold water
  2. Bring tomato soup to a boil in saucepan
  3. Add gelatin and allow to cool
  4. When cool add cream cheese
  5. Stir in all other ingredients
  6. Pour into an oiled 9 x 5-inch loaf pan cover and chill for 2 to 4 hours or until set To serve unmold on large platter
  7. Garnish with lettuce and lemon and lime slices
