MomS Peach Pie

Ingredients

  • 1 egg white
  • 1 unbaked pastry shell
  • 6 large fresh peaches peeled and sliced
  • 34 c all-purpose flour
  • 12 c packed brown sugar
  • 13 c sugar
  • 14 c chilled butter cut into 6 pieces

Directions

  1. Beat egg white until foamy brush over bottom and side of pastry
  2. In small bowl combine flour and sugars cut butter into mixture until it resembles fine crumbs
  3. Sprinkle 23 of mixture in bottom of crust top with peaches
  4. Sprinkle with remaining crumb mixture
  5. Bake at 375 for 40 to 45 minutes or until filling is bubbly and peaches are tender
  6. Yields 6 to 8 servings
