Monmouth County Chicken Pot Pie
Ingredients
- 2 c cooked chicken diced
- 2 c cooked ham diced
- 14 c butter or margarine melted
- 14 c sifted flour
- 34 c chicken broth
- 1 c light cream
- 14 tsp salt
- 18 tsp pepper
- 12 c chopped onion
- 23 c sliced mushrooms
- 14 c cooking sherry
- Jersey sweet potato biscuits
Directions
- Place chicken and ham in 2-quart casserole
- Combine butter or margarine and flour stir until smooth
- Slowly stir in broth and cream
- Cook 200 stirring constantly until thickened
- Add salt pepper onion mushrooms and sherry
- Pour over chicken and ham
- Drop sweet potato biscuit dough by tablespoons around edge of hot mixture
- Bake at 350 for 45 minutes
- Serves 8
