Monteray Carrot Cake

Ingredients

  • 2 c flour
  • 2 tsp salt
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 2 c sugar
  • 1 12 c salad oil
  • 4 eggs
  • 2 tsp vanilla
  • 3 c grated or ground carrots

Directions

  1. Measure into sifter the flour salt cinnamon baking soda and sugar
  2. Sift into mixing bowl and add salad oil eggs one at a time and vanilla
  3. Beat until light Stir in carrots
  4. Pour into a 9 x 13-inch pan Bake at 375 for 45 to 50 minutes
