Mozzarella Meat Loaf

Ingredients

• 2 lb ground turkey
• 2 Egg Beaters
• 1 c saltine cracker crumbs
• 12 c grated Parmesan cheese optional
• 12 c chopped onion
• 1 to 1 12 tsp salt
• 1 tsp dried oregano
• 1 8 oz can pizza sauce
• 3 slices Mozzarella cheese halved
• 2 Tbsp oleo

Directions

1. Mix turkey Egg Beaters crumbs milk 1 cup skimmed Parmesan cheese onion salt and oregano
2. Shape into loaf and place in a greased 9 x 5 x 3-inch loaf pan
3. Bake at 350 for 1 to 1 14 hours or until no pink remains drain
4. Spoon pizza sauce over loaf and top with Mozzarella cheese slices
5. Return to oven for 10 minutes or until cheese is melted
6. Yield 8 to 10 servings
