Mrs ThelmaS Jam Cake
Ingredients
- 12 c butter or Crisco
- 12 c chopped raisins
- 1 tsp soda
- 12 tsp cloves
- 3 eggs separated
- 1 tsp cinnamon
- 1 c light brown sugar
- 2 c plain flour
- 3 Tbsp sour milk
- 1 c blackberry jam
Directions
- Cream the shortening
- Add sugar gradually cream until light and fluffy
- Beat egg yolks add to creamed mixture
- Sift together the soda nutmeg cloves cinnamon and flour
- Combine jam and sour milk
- Add dry sifted ingredients and jam mixture to the creamed mixture
- Add raisins
- Beat egg whites until stiff fold into batter
- Divide the batter equally into 2 8-inch cake pans
- Bake at 375 for 25 minutes
