Mrs TranS Fried Rice
Ingredients
- 2 eggs
- 1 Tbsp butter
- 1 small onion peeled and finely chopped
- 3 Tbsp oil
- 12 c green peas
- 12 c corn
- 1 carrot peeled and grated
- 1 tsp sugar
- 1 Tbsp fish sauce
- 2 Tbsp soy sauce
- 4 c cold cooked rice
Directions
- Scramble eggs in butter and set aside
- In wok or large frypan over medium heat saute onion in oil until transparent
- Add vegetables and cook stirring for 3 minutes
- Add sugar fish sauce and soy sauce and mix well
- Add rice and cook about 5 minutes stirring frequently until all food is hot
- Chop up scrambled eggs mix in and serve
