Mulligatawny Soup

Ingredients
- 14 c butter
- 12 c onion diced
- 1 carrot diced
- 2 celery stalks diced
- 1 12 Tbsp flour
- 2 tsp curry powder
- 4 c chicken broth
- 14 c diced apple
- 12 c boiled rice
- 12 c cooked chicken
- 13 tsp thyme
- salt and pepper
- 12 c hot cream
Directions
- Saute onion carrot and celery in butter
- Stir in flour and curry
- Cook for 3 minutes
- Pour in broth and simmer for 30 minutes
- Add apple rice chicken thyme salt and pepper to taste
- Simmer for 15 minutes
- Immediately before serving add cream
