Mushroom-Chicken Cutlets

Ingredients

  • 2 chicken breasts halved skinned and boned
  • 1 12 c dry bread crumbs
  • 12 c grated Parmesan cheese
  • 2 Tbsp parsley flakes
  • 12 tsp garlic salt
  • 2 beaten eggs
  • 1 Tbsp water
  • 4 Tbsp corn oil
  • 1 c sliced fresh mushrooms
  • 12 c melted butter
  • 2 Tbsp lemon juice

Directions

  1. Combine crumbs Parmesan cheese parsley flakes and garlic salt
  2. Mix eggs and water together
  3. Dip each chicken cutlet into egg mixture then into crumb mixture
  4. Heat oil in large skillet and brown cutlets on each side until golden brown
  5. Remove to flat baking dish
  6. Saute mushrooms briefly in same skillet spoon over cutlets
  7. Combine melted butter and lemon juice pour over chicken and mushrooms
  8. Bake at 350 for 30 minutes
  9. Serves 4
