Mushroom-Chicken Cutlets
Ingredients
- 2 chicken breasts halved skinned and boned
- 1 12 c dry bread crumbs
- 12 c grated Parmesan cheese
- 2 Tbsp parsley flakes
- 12 tsp garlic salt
- 2 beaten eggs
- 1 Tbsp water
- 4 Tbsp corn oil
- 1 c sliced fresh mushrooms
- 12 c melted butter
- 2 Tbsp lemon juice
Directions
- Combine crumbs Parmesan cheese parsley flakes and garlic salt
- Mix eggs and water together
- Dip each chicken cutlet into egg mixture then into crumb mixture
- Heat oil in large skillet and brown cutlets on each side until golden brown
- Remove to flat baking dish
- Saute mushrooms briefly in same skillet spoon over cutlets
- Combine melted butter and lemon juice pour over chicken and mushrooms
- Bake at 350 for 30 minutes
- Serves 4
