Mushroom-Stuffed Chicken Breasts

Ingredients

  • 14 lb plus 4 Tbsp butter
  • 12 lb mushrooms chopped fine
  • 12 tsp salt
  • 14 tsp freshly ground pepper
  • 1 12 c freshly made breadcrumbs
  • 14 tsp nutmeg
  • 4 chicken breasts skinned boned and halved
  • 1 c heavy cream

Directions

  1. Preheat the oven to 350
  2. Melt 14 pound of the butter in a skillet
  3. Add the mushrooms salt and pepper and cook stirring often until the mushrooms turn very
  4. dark and absorb all the butter
  5. Remove from the heat and stir in 34 cup of the breadcrumbs and the nutmeg
  6. Divide the mushroom stuffing into 8 portions and place a portion in the center of each piece of chicken
  7. Fold the chicken around the stuffing and place seam side down in a shallow casserole
  8. Melt the remaining 4 tablespoons butter and brush over the chicken
  9. Sprinkle with the remaining 34 cup of breadcrumbs
  10. Pour on the cream and bake for 30 minutes until lightly browned
  11. Serves four to six
